As the holiday season begins to kick in, refresh yourself with a healthy and tasty Strawberry & Coconut Daiquiri--brought to you by our friends at Tasty25.com!

Cool off  and relax with this delicious Strawberry-Coconut Daiquiri! Sent in by Bekah Little of Tallahassee, FL.  At a mere 112 calories per serving and packed with 70% of your daily suggested Vitamin C, you can chill out & relax.

Let's make it!

What you need:
2 1/2 Cups chopped fresh strawberries 3 Cups of ice cubes 3 Tbsp. fresh clover honey 2 Tbsp. fresh lime juice 2 Tsp. Coconut extract (*Alcoholic Variation* - 3/4 Cup coconut-flavored rum.) 1/2 Cup crushed pineapple (OPTIONAL; Tasty25 Staff suggestion.) Directions: (Approximate cook time: 10 minutes; Serving size – 4-6 adults)
  1. Combine strawberries, honey and lime juice together in a blender; Blend until smooth. (Tasty25 Staff Tip: Freeze fresh berries for 30 minutes prior to making this recipe for an even colder & more refreshing drink!)
  2. Add ice cubes & coconut extract (or rum), blending until mix is frothy.
  3. Transfer mixture to pitcher; Serve immediately.
  4. Eat & enjoy!

Try this delicious, unusual potato salad, with its subtle hint of curry, with grilled salmon or other seafood. You might like it so much that it will migrate to your winter holiday menus. Makes 4 servings

4 cups cooked, peeled and diced sweet potatoes (about 2 large)

3 tablespoons lemon juice

½ cup mayonnaise

2 teaspoons curry powder

1 tablespoon brown sugar

1 teaspoon Dijon mustard

¼ cup dried cranberries

½ cup pecan pieces, lightly toasted

1 clove garlic, minced

2 green onions, sliced

Salt and pepper

Sprinkle potatoes with lemon juice. Combine mayonnaise, curry powder, brown sugar and mustard. Add sweet potatoes, dried cranberries, pecans, garlic and green onions. Gently toss. Season with salt and pepper. Chill overnight.
